RECIPE
Makes 12-15 Cookies
1.5 cups of Almond Flour
1/2 cup of Gluten Free AP Flour
1/2 Gluten Free Oats
1/2 tsp Xantham Gum (VERY IMPORTANT!! The initial cost is expensive, but it will last a long time)
1/2 tsp Baking Soda
1/4 tsp of salt
6 tbsp of room temperature butter
5 tbsp of sugar substitute (I use Miss Jones Original Blend bettersweet)
5 tbsp of brown sugar substitute (I use pyure ORGANIC BROWN SWEETENER)
1 egg and 1 egg white
1+ tsp vanilla extract
At your discretion Sugar Free Chocolate Chips (Lakanto Sugar Free Chocolate Chips)
Coconut Flakes (optional)
DIRECTIONS
Preheat oven to 350 degrees
Mix the dry ingredients together (flours, xantham gum, baking soda and salt)
Mix the sugars and butter using an electric hand mixer until a somewhat creamy consistency (it won’t get fully creamy using sugar substitutes).
Mix in the egg, egg white and vanilla to the butter and sugar.
Add the flour mixture until it comes together
Mix in the chocolate chips (and coconut if using) by hand
Scoop out dough balls (using an ice cream scoop, if available) onto parchment lined baking tray
Flatten round balls a little bit
Bake on middle rack for 14 minutes, rotating half way through
Remove from oven and allow to cool on pan for 5 minutes before removing to a cooling rack.
